Goats Cheese and Onion Marmalade Tart




Ingredients

250g ready made puff pastry
110g Onion Marmalade ( I make my own but onion marmalade is available in good supermarkets)
250g Goats Cheese ( I prefer soft creamy ones but any kind of cheese works)
Cherry Tomatoes ( optional)

Method

Roll the puff pastry out to approximately 5mm thick, cut four circles of about 10cm diameter around a small plate or bowl. Using a fork prick the base of the tarts.

Spread the onion marmalade over the base, slice the goats cheese and place over your onion marmalade, adding a few tomato pieces if you wish. Bake in a pre heated oven at 200oc for 12-15 minutes until the cheese is melted and golden brown and the pastry is crisp

Serve immediately with a fresh salad of mixed leaves and olive oil vinaigrette.
