Fine food worth the extra mile!

A classic bara brith

Welsh food

1lb of self-raising flour
1lb of dried mixed fruit 
½ a pint of warm black tea
9oz brown sugar
2 teaspoons of mixed spice
One beaten egg

Soak the fruit in strained tea and add the sugar. Leave overnight.
On the following day, line a 2lbs loaf tin with baking parchment and preheat the oven to 170C or Gas Mark 3.
Add the rest of the ingredients into the fruit mixture. Beat well.
Pour it into the loaf tin and bake until a skewer inserted into the middle comes out clean. This takes around 1½ hours.
Serve in buttered slices.
